Note that some Weapons have unique Skills that can't be overwritten. To do so, go to a Site of Grace, enter the Ashes of War menu (unlocked by obtaining the Whetstone Knife), and choose an Ash to slot into a weapon, in order to learn a different Skill and change the weapon's scaling. Skills come equipped by default on Weapons and Shields, but you can modify them by using Ashes of War. You are free to combine your different Skills with different weapons, and you're free to create Builds for your character with different Weapons, Skills, and Magic. Now, in Elden Ring, you're actually able to freely interchange Skills between a large variety of weapons, and as mentioned by creator Hidetaka Miyazaki, there are about 100 different skills in total.
